EVORA CAVIAR Ltd was established in 1995, in Paris. During these more than 20 years, we were mainly serving our clientele located in Paris and Côte d’Azur. Our products of superb quality gained us impeccable reputation and recommendations of our current customers started reaching out as far as to Monaco, Belgium, Switzerland, Luxembourg which inevitably meant expansion of the company in order to better serve our customers in the whole Europe.

All our caviar comes from the sturgeon farms in Iran.The company has all the authorisations required in its line of business (such as a B- VE 5526 -EC number, European accreditation and a HACCP system) plus a specific laboratory to oversee the preparation and packaging of its products pursuing the highest standards of hygiene and performance – all complying with the toughest European rules

Caviar has been our main product line  for all those years, but with time we managed to offer other gourmet products as salmon roe, truffles, king crab and saffron, which have become very popular among our customers due to the top quality as well.

All these factors allow the company to possess the certification for AutoControl System Guide 32 from the Ministry of Health. Apart from these inspections alternating with those undertaken on behalf of the Ministry of Health, the company also relies on the services of an accredited private consultants to take numerous samples microbiological or chemical for analyses. The services of renowned organisations, such as the Pasteur Institute, are also called upon, and other very stringent audits are regularly performed at the request of certain customers.
